Day 63: Mango Soup


7 ripe mangos, peeled and sliced
2 cloves garlic, chopped
1/2 tsp fresh ginger, grated
1/2 white onion, diced
1 cup chicken stock
2 T rice vinegar
3 T sweet, hot chili sauce
1 tsp soy sauce
1/4 cup cream


1. Put mangos, ginger, garlic and onion into a blender and puree.
2. Add stock, vinegar, curry and chili sauce to mango puree and blend.
3. Season to taste with soy sauce.
4. Pour into a dish and refridgerate
5. Serve chilled with a spoonful of cream and garnish with chives.

  1. This soup looks so intriguing! I've never tried a savory/sweet fruit soup. But something about the onions, garlic, and chicken stock with mango make it sound amazing . . . I will be trying this one!
