Day 79: Chicken Fried Rice With Mushrooms

3 chicken breasts, cooked and finely chopped
4 cups white rice,prepared
1 cup frozen peas and carrots, thawed
4 green onions, sliced
2 garlic cloves, minced
2 cups brown mushrooms, finely chopped
4 eggs, scrambled and finely chopped
4 T vegetable oil
1/4 cup soy sauce
pepper to taste

1) In a fry pan or wok add 1 T of oil and add mushrooms. Cook until soft.
2) Add the rest of oil and add all ingredients except soy sauce to pan.
3) Cook until all ingredients are heated.
4) Add soy sauce to rice mixture and stir until combined.
