Day 108: Roasted Butternut Squash

This is a great side dish with roasted chicken...

1 large Butternut squash
1/4 cup extra virgin olive oil
2 T fresh thyme leaves
salt and pepper to taste

1) Cut squash in half and place on a parchment lined baking sheet.
2) Sprinkle olive oil over each squash half.
3) Season with thyme, salt and pepper.
4) Bake in a 425F oven for approximately 45 minutes.
