Day 111: Potato Skins

6 potatoes, halved and baked
3 green onions, chopped
4 T bacon bits
1 cup cheddar cheese, grated
1/2 cup sour cream

1) Scoop the centre of each potato half leaving a thin layer of potato.
2) Sprinkle each half with a generous amount of cheese.
3) Top with green onion and bacon bits and place on a parchment lined baking sheet.
4) Bake at 450F for 10 minutes and serve with a spoonful of sour cream.

  1. I do love a good potato skin. It always shocks me when people eat the inside of their baked potato, leaving the crispy, salty shell for the trash bin. This looks like a solid recipe! I might have to play with a bit after trying it the classic way. I'm thinking maybe roasted cherry tomatoes and feta cheese, topped with some chives from my garden. :)
